Cilantro Lime Chicken (2 Serving Recipe)


Description

Cilantro Lime Chicken is a fresh, tasty meal to enjoy on the grill or in the oven. Zingy lime and fresh cilantro star in this easy chicken marinade. The marinated chicken breasts are grilled or baked to perfection for a burst of flavor in every bite. Ready in less than an hour, marinading time included!


Ingredients

  • juice of 1 large lime
  • 1/4 cup olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1 clove of garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup cilantro, chopped
  • 2 chicken breasts, boneless, skinless, and trimmed
  • pico de gallo and chopped avocado, for serving, if desired

Instructions

  1. Pound the chicken breasts to about 3/4 inch thickness for a tender results.
  2. In a small bowl, whisk together the juice of lime, olive oil, kosher salt, pepper, minced garlic, and red pepper flakes.
  3. Pour the marinade over the chicken in a large dish or a gallon-sized plastic bag. Refrigerate for at least 30 minutes (or up to 2 hours) to let those flavors meld.
  4. When ready to cook, remove the chicken from the marinade. Grill over medium-high heat for about 6 minutes per side or until the interior temperature reaches 165°F. Alternatively, bake at 425°F for 25-30 minutes or broil for 5-6 minutes per side.
  5. Plate the chicken and top it with fresh pico de gallo and chopped avocado.
