- 2 boneless, skinless chicken breasts
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 2 tablespoons butter
- 2 teaspoons minced garlic
- 3 cups fresh baby spinach
- 3 ounces cream cheese, cut into cubes
- 1/4 cup bacon, cooked and crumbled
- 1/4 cup Parmesan cheese, grated
Instructions
- Preheat the oven to 375°F and spray a baking dish with nonstick spray. Set aside.
- In a small bowl, mix the garlic powder, onion powder, and paprika. Season the chicken breasts with the spice mixture generously on all sides.
- Heat the oil in a large skillet over medium-high heat. Cook the chicken 1-2 minutes on each side to sear and lock in the flavor. Set aside.
- In the same skillet reduce heat to medium and add butter. Stir in garlic and sauté for 30 seconds, stirring constantly. Add spinach and cook for 1-2 minutes until slightly wilted, stirring often.
- Add the cream cheese, bacon, parmesan, salt, and pepper and continue to cook until the cream cheese is melted and the mixture is combined. Remove from heat.
- Use a sharp knife to slice a pocket into the side of each chicken breast. Carefully use a spoon to stuff each chicken breast with the cream cheese mixture.Â
- Place the stuffed chicken in the baking dish and bake for 25 minutes or until the chicken reaches 165°F in the thickest part.
