Step by step

  1. Preheat the oven to 375°F and spray a baking dish with nonstick spray. Set aside.
  2. In a small bowl, mix the garlic powder, onion powder, and paprika. Season the chicken breasts with the spice mixture generously on all sides.
  3. Heat the oil in a large skillet over medium-high heat. Cook the chicken 1-2 minutes on each side to sear and lock in the flavor. Set aside.
  4. In the same skillet reduce heat to medium and add butter. Stir in garlic and sauté for 30 seconds, stirring constantly. Add spinach and cook for 1-2 minutes until slightly wilted, stirring often.
  5. Add the cream cheese, bacon, parmesan, salt, and pepper and continue to cook until the cream cheese is melted and the mixture is combined. Remove from heat.
  6. Use a sharp knife to slice a pocket into the side of each chicken breast. Carefully use a spoon to stuff each chicken breast with the cream cheese mixture.
  7. Place the stuffed chicken in the baking dish and bake for 25 minutes or until the chicken reaches 165°F in the thickest part.
