For the Chicken:
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 chicken breasts, boneless and skinless
- salt & pepper
- 2 tablespoons olive oil
For the Sauce:
- 1 tablespoon olive oil
- 1/4 cup white wine or chicken broth
- 2 cloves garlic, minced
- 1/2 teaspoon fresh parsley, chopped
- 1/2 teaspoon fresh thyme, chopped
- 3/4 cups heavy cream
- 1/2 teaspoon cornstarch
Instructions
- In a small bowl, combine the onion powder and garlic powder. Then, add the chicken and generously coat it on all sides with the mixture. Season with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat. Cook the chicken for about 5 minutes per side, until golden brown and cooked through, with an internal temperature of 165 degrees. Remove to a plate and set aside.
- Next, add the olive oil, garlic, and herbs to the pan and cook until fragrant, about one minute.
- Then, add the chicken broth or white wine to the pan and scrape the bottom to deglaze. After that, add cream and bring to a boil.
- Combine cornstarch with one tablespoon of water and stir until smooth. Add the mixture to the sauce and stir until thickened. Season with salt and pepper to taste.
- Return the chicken and any juices to the skillet. Serve the chicken with the pan sauce.
