Skillet Ravioli and Meat Sauce (for 2)


Description

Skillet Ravioli and Meat Sauce (for 2) is loaded with flavors from Italian sausage, fresh basil, and tomatoes. Ideal for when you want a quick, yet satisfying dinner.


Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 small yellow onion, diced
  • 14.5 ounce can tomatoes, diced
  • 1 teaspoon garlic, about 2 cloves, minced
  • 8 ounces ground Italian sausage
  • 9 ounce package ravioli, refrigerated
  • 2 tablespoons fresh basil, chopped
  • Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large skillet. Add the diced onion and cook until softened and translucent, stirring often.
  2. While the onions cook, pour the diced tomatoes into a food processor or blender and pulse until smooth. Set aside.
  3. Add garlic to the onions and cook for 30 seconds, stirring often.
  4. Add the sausage and brown it, breaking it apart as it cooks.
  5. Once the sausage is browned, add the blended tomatoes and bring to a simmer for 10 minutes, stirring occasionally.
  6. Add water and ravioli to the skillet. Return to a simmer and cook until the pasta is tender, about 7 minutes.
  7. Remove from heat and season with salt and pepper to taste. Top with fresh basil and Parmesan cheese before serving.
