Why I love this recipe
- It’s a powerhouse of nutrients packed into one neat little package. Avocados bring their creamy texture and healthy fats to the table, while eggs provide a punch of protein to fuel your day.
- Add in some bacon for that irresistible smoky flavor and cheese for that gooey goodness, and you’ve got yourself a breakfast of champions.
Ingredients

- avocado
- eggs
- bacon crumbles
- cheese
- salt and pepper
Step by step

- Preheat oven to 350°F.
- Use a spoon to scoop out half of each avocado piece to make room for the egg.
- Place the avocado halves on a baking sheet or balance in a muffin tin.
- Crack the egg and pour each into one half of the avocado.
- Top with bacon and cheese and bake for 20-30 minutes depending on how done you like your egg.
- Season with salt and pepper to taste and serve immediately.
Tips for best results
- Use ripe avocados for the best flavor and texture.
- Feel free to customize with your favorite toppings.
- Be careful not to overcook the eggs. The yolk should be slightly runny for the best taste.
Serving suggestions
The versatility of the avocado egg bake is that it pairs well with almost anything. A side of toasted bread or a fresh salad would complement the rich flavors of the dish. Or, if you’re in the mood for something sweet, a fruit salad would provide a nice contrast.

Storage
If you find yourself with leftovers, it’s a good idea to store them in an airtight container in the fridge. When you’re ready to enjoy them again, simply reheat in the oven or microwave until warmed through. Just remember, while this dish can be reheated, it truly shines when served fresh.
